Wiener Melange

The Wiener Melange is the coffee-house standard of Vienna — the drink a waiter sets down on the marble table without being asked twice. It is an espresso lengthened with a little hot water into a Verlängerter, then topped up with hot milk and a soft cap of milk foam: roughly half coffee, half milk, milder than a cappuccino and served in the larger, thick-walled cup the coffee house uses. It arrives on a small tray with a glass of cold water, and that pairing is not decoration — the water is the palate-cleanser the whole ritual is built around. Omit the milk foam and add whipped cream instead, and you have crossed into a Franziskaner.

Steps

  1. Pull a single espresso

    The Melange is built on a moka or espresso shot of 7–10 g, extracted at 9 bar for 24–30 seconds. It is the base the whole Viennese coffee canon is poured from.

  2. Lengthen it into a Verlängerter

    Hot water stretches the shot to around 90 ml — a 'lengthened' coffee, milder than an espresso and the traditional Viennese base drink. Water and coffee meet first, before any milk, so the dilution is even rather than milky-thin.

  3. Steam the milk and pour it over

    At roughly one part milk to one part coffee, the milk is the partner rather than the subject. Steam it soft and glossy to 60–65°C — never above, or the milk turns cooked and flat.

  4. Finish with a light cap of foam and serve with a glass of water

    The foam should be a small, soft 'Haube' that integrates with the drink, not a stiff crown — the Melange is milder and less foamy than a cappuccino. The glass of cold water on the tray is the coffee house's non-negotiable accompaniment.

What is the difference between a Wiener Melange and a cappuccino?

Balance and size. A cappuccino is a small cup where the milk foam usually outweighs the espresso and sits as a thick cap. A Wiener Melange mixes coffee and milk at roughly one to one, in a larger 180–250 ml cup, with a softer foam that integrates into the drink — milder, milkier, and less foamy.

What is a Verlängerter?

A Verlängerter is a 'lengthened' coffee — an espresso topped up with hot water, milder than a shot and bigger in the cup. It is the base of the Wiener Melange and a standard Viennese order in its own right.

What is a Franziskaner, then?

A Melange finished with whipped cream instead of milk foam. The two are close enough that the cream version gets its own name; order 'mit Schlagobers' and the coffee house will serve you a Franziskaner.

Why is Wiener Melange served with water?

Viennese coffee-house culture always sets a glass of cold water on the tray with the coffee, a palate-cleanser between sips. The tradition itself — the marble tables, the trays, the unhurried service — is inscribed in Austria's national inventory of intangible cultural heritage.
